Chicory salad with feta and cucumber dressing

Remove ends and outer leaves of chicory heads. Chop chicory and slice tomato into thin wedges. Peel and cut onion into wedges. Press garlic for the dressing. Peel cucumber and cut lengthwise into halves, remove seeds and membrane with a spoon. Grate cucumber and remove excess liquid using a strainer. In a bowl, stir together grated cucumber, yoghurt, garlic, honey, mint, salt and pepper to make dressing. Arrange chicory, tomato and onion on two plates, spoon on cucumber dressing and top with feta cubes and black olives. Serve with Turkish bread or steak and pan-fried potatoes.
